On a summer evening, happiness is yours when you step into the middle of the traditional landscape of Telkkämäki Heritage Farm. On the Slash and Burn Farming Food Trail, the heritage of slash-and-burn farming opens up in the landscape, stories and taste memories that go back centuries.
On the trip, we raise blackcurrant leaf sparkling glasses into the forest! We enjoy ash-flavored turnip graves and smoke-ripened lake fish with traditional Eastern Finnish rye bread and mushroom barley. The mushrooms vary depending on the season, from chanterelles to black trumpet mushrooms and boletus. Traditional Talkkuna is made from barley flour and served with berries, cottage cheese, honey and cream. During the meal, the guide will tell you about kaski culture through food tradition.
The flavors of ash and fire are more than just a meal. It is a journey to a time when food was born from the earth, fire, and human hands – a holistic experience where history, landscape, and flavors merge into one.
